The Best Hot Giardiniera (Chicago-Style!)
This Chicago-style giardiniera recipe is the ultimate condiment with fresh peppers and veggies in oil and seasonings, an absolute must for Italian beef sandwiches! This is exactly what I grew up with living in the Chicago area. This is ALWAYS in my refrigerator. My absolute favorite.

THINGS YOU’LL NEED:
1 cup cauliflower florets chopped (about 1/4 head of cauliflower)
5 jalapeno peppers diced (use bell peppers for mild giardiniera
5 serrano peppers diced (or use sport peppers - optional, for hot giardiniera)
1 medium carrot diced
2 celery stalks diced
1/2 cup salt
1 cup olive oil (extra virgin is best, though you can use vegetable oil)
1 cup vinegar (or use water, like many Chicago giardiniera brands - see the Recipe Notes)
4 cloves of garlic minced
2 teaspoons dried oregano
1/2 teaspoon celery seeds
1 tablespoon crushed red pepper (or to taste)
Ground black pepper (to taste)
1/2 cup green olives chopped

    That recipe looks like the exact duplicate of Texas Red chili. As for beans? To each his own. I prefer no beans. As for the argument about beans? Chili was originally no beans. The story how beans came about in chili was back in the old west, when Cowboys moved cattle across country, the cook would sometimes run out of chili and some of the Cowboys wouldn't get any chili. So the cook would add beans as a filler to make more chili and feed more Cowboys. Beans were a cheap way to make the chili go further.

    I’ve had a soup similar to this… a cream of of poblano pepper soup with a little bit of chorizo and cooked shrimp chunks with a few tortilla chip strips in the middle to garnish it 😜🙏🏻… I’m definitely going to try your recipe, and maybe add a Serrano or two as you’ve suggested 🙏🏻

      They can be bitter for some, and tend to float around, as there are a LOT of them. You can leave them in if you'd like. They're edible.

    I use maseca to thicken my chili. This is the first time I've ever heard of anyone else doing the same. A dash of cocoa powder adds a nice depth of flavor. Onions and tomato paste are also a good thing. 🫡 #Texas 🤠

    I've made your recipe 3x since discovering it. My recipe was so basic before, so I thank you for the flavor ideas. I added chipotle corn, pinto means and, a turn of crema. It was delish!

    If I could give a suggestion because this recipe is a lot like my own mango habanero sauce. You should add a dash of two of dark soy sauce. It brings a deeper richer flavor (umami)

    Question.....I am a newbie to making tabasco sauce. I love to ferment and cannot wait to try this method. Once complete, do all the bottles need to be refrigerated? Can you water bath can to extend shelf life??

      It's up to you on refrigeration. It may continue to ferment out of the fridge and if you don't cook it.     Just wondering what you do with the left over cooking water. I boiled some corn in it for a nice kick, just wondering if anyone has tried to ferment, ala spicy ginger drink?

      You can use it, though there isn't much infusion, really. I do think it's useful to reuse for boiling other things, though. You might cool it and try it in a brine ferment, though I don't think it would add much flavor outside of the other ingredients. You can always just toss a whole pepper into your ferment.

    I love this type of coleslaw. My mother never made this. I always remember eating this at church lunches, family picnics etc. Like I said, I don't think my Mother ever made this. But it was a flavorite of my relatives and church people.

    Would it be okay to skip the straining step with the fresh chilis and leave them in the honey? Or would the chilis/honey go bad? It looks so so good!! 😍

    I'm like you, i use gochujang for lots of dishes both Korean and others. Its a great versatile sauce, and these days available most places. I'm in the UK and can get it in run of the mill supermarkets, not just specialist suppliers. Also, today, i'm making baked spicy chicken wings, using your sauce, slightly modified as you say to my taste. Keep up the videos, they are great.

    Nice video thanks for sharing. I love it spicy I make my hot sauce with Habanero peppers! and I like the pulp in mine. Great idea to dehydrate the pulp and make a seasoning!

    Olive olaj? Nem. Mi magyarok disznó zsírt használunk. Az olíva olajat az itteni öregek nem is ismerik..nem olasz étel ez. Az olíva olaj teljesen más ízt ad neki így már nem autentikus.
